• Killing the microorganisms in food.

Refrigeration (Freezing)
• Low temperature inactivates the
microorganisms, thus slowing down the
multiplication of microorganisms
• For example fish and meat
Heating
• Heating kills the microorganisms and spore.
Canning and bottling
• Bacteria are killed by heating. Sealing the
can in vacuum prevents the entry of
microorganism. Microorganism cannot
survive in the absence of oxygen in sealed
cans.
Adding preservative
• Preservative can prevent the growth of
microorganisms.
• For example adding sulphur dioxide to fruit
juices

Pasteurization
• 1):Pasteurization Food is heated to 72 for 15
seconds , then quickly cooled down to 10.
• 2): Food is heated to 63-68 for 30
minutes ,then quickly cooled down to 10

Smoking
• The meat or fish is hung over a charcoal
fire . the smoke dries the surface and also
coats the meat or fish with substance
inhibiting the growth of bacteria
Pickling
• Food and vegetables .is salted first, the

growth of bacteria .
Natural drying (dehydration)
• It must be less than 15 C.
