Transcript Knife Cuts

• The process of cutting foods into
fine or coarse cut pieces.
• Onions, carrots, sweet peppers,
celery, tomatoes, and potatoes are
all examples of foods that are
coarsely chopped to be added to
stews and chili.
• A chop differs from a dice or
mince by its larger-sized cut.
• Ex. Tomato
• Using a chef’s knife to
cut food into 1/8 to 5/8
inch cubes.
• Food that has been cut into box
shaped pieces with all sides
equal. Cooked meats are often
cut into Cubes to be used in
recipes such as salads and
casseroles.
• Some refer to Cube and Dice
as the same process however,
Dicing generally refers to
cutting square pieces into fine,
medium, and large Cubes that
range in size from less than 1/8
inch square to approximately
3/4 inch square.
• The cut mince is the smallest
cut of all the cuts.
• Is to cut into very small
pieces, used most often with
shallots and garlic.
• a method of slicing fruits,
vegetables and meats into
strips that resemble
matchsticks.
• Julienne strips are usually no
more than 1/8 inch (3mm)
square, but can be cut to any
length desired.
