• Is a bacteria causing illness that happens in
your intestines
• There are 3 types
– Typhimurium,
– Enteritidis
– Typhi

• Symptoms last up to 7 days

If not treated with anabatic it is fatal
Children, elderly and those with week immune
symptoms are likely to get this
– You get this through mice

• Least common in US but most common in

• High Fever
• Nausea
• Vomiting
• You get this from drinking water

E-Coli
• E Coli is a common bacteria that lives in the
intestines of animal and humans.
• The dangerous E-Coli strand is E-Coli 0157:H7
• It is spread from undercooked meat, live on
the cows udders into milk that is not
pasteurized. It can even get spread by
someone not washing their hands and
handling your food!

Treatment
Since it is a bacteria there is no antibiotic for you to
take so you have to ride it out and do what your
doctor subscribes
Mad Cow Dieses
• Also Called Bovine Spongiform
encephalopathy aka BSE (Organic farmers do
not treat BSE)
• In the Bovine It attacks the nervous system
• If a human were to eat a contaminated meat
they have a higher chance of getting the
human version
Swine Flu AKA H1N1
• It is a flue virus with the same symptoms as
normal flu
• Swine flu got its name because of a Similar
virus found in swine
• You can not get this from eating Pork
products!
• There is now a vaccine
Transportation
• Things get swapped and not just commodity!
• Often times animals pick up things when
being kept in closed quarters.
• Terrorist try to contaminate our food to wipe
out or put a damper on our county which
usually happens during transportation
What can we do to Protect Ourselves
• Wash, wash, wash, and. . . .WASH YOUR
HANDS
• Stay up to date on vaccines
• Cook your meet all the way through to the
correct temperature
• Make sure your meat is USDA approved
