:Indian herbs:
As I said Indian kitchen is full of
Herbs , but here I am going to
Mention very very few of them
Which are tulsi, turmeric,
cardamom , coriander ,
asafoetida . And the recipes
Which I am going to mention are
pure vegetarian and jain (without onion
potato , garlic or any other root plant)
Queen of herbs
Basil
basil
Basil is one of the
Most sacred plant
With strong religious
Mean in India . On the
Bases of Hindu
religion it is believed
That if basil leaves
Are burned with a
dead person the man
will go to heaven .
The basil plant is a small bush that grows to 2-3 ft in
height . Its flower are red , purple , or sometimes
white
In color . It is believed to be air purifier . The plant
gives strong spicy scent when bruished. It has a warm
Clove like flavor and fragrance .
: HEALTHY BASIL :
Basil most popularly known as tulsi has been
used for 1000 of years by ayurveda for its
diverse healing properties . Basil plant has
many medicinal properties the leaves
strengthen the stomach and help in respiratory
diseases . Basil leaves are regarded as anti
stress agents . Recent studies have shown that
afford significant protection against stress
even healthy person can chew 12 leaves of
basil to live a stress free life basil makes good
medicine for headache and diabetes .

Materials : 200 gm of paneer , mashed
1 banana , boiled and peeled 1|4 th
cup singhare ka atta (water
chestnut ) sendha namak (white rock
salt ) 2 tsp or to taste 1|4 tsp kali
mirch (powdered black pepper) 1
green chilli , finely chopped 1tbsp
tulsi leaves , finely chopped ghee for
pan frying
Grate bananas , add paneer , atta , salt , pepper, green
chillies and tulsi and mash well till smooth and is like dough .
Form into flat rounds (grease your hand if it sticks )
Heat a thin layer of ghee in a non - stick frying
pan . Fry the rounds over medium heat , till crisp and brown
on both the side
Add a little more ghee if required and serve with hot chutney .
Turmeric( haldi)
Turmeric is a dried root that grows about 2 feet in length .
The turmeric plant is about 3 feet long with funnel shaped
yellow flowers . Turmeric is of bright yellow color . It has
a spicy fragrance with slightly bitter flavor . Turmeric is an
important spices in India having great religious
significance and medicinal value .
Folk medicine and traditional uses of
turmeric :
•In India, turmeric has been used in an attempt to treat
stomach and liver ailments, as well as topically to heal
sores, based on its supposed antimicrobial property. It
does many more hells like:
•Blocking cancer
• Powerful antioxidant
• Potent anti-inflammatory
• Osteoarthritis pain relief
• Indigestion and heartburn aid
• Heart disease
• Impact on diabetes
An easy to make, simple preparation straight from South
India.A heartwarming mix of spices cooked with coconut
and raw bananas.
Ingredients
Three raw bananas
Grated coconut - half cup
Four green chilies
Three whole dry chili
Cumin seeds - half tsp
Mustard seeds- half tsp
Turmeric powder - half tsp
Curry leaves - 1 sprig
Salt to taste
Coconut oil - 2 tsp
Coriander is native to region

LEAVES ARE VARIABLE IN SHAPE
, BROADLY LOBED AT THE BASE OF
THE PLANT . THE FLOWERS ARE
BORNE IN WHITE OR VERY PLATE
PINK , WITH THE PETALS POINTING
AWAY FROM THE UMBEL . THE
FRUITS ARE GLOBULAR . THE SEEDS
ARE GENERALLY USED AS SPICE OR
ADDED INGREDIENT .
Medicinal values of coriander
Coriander, commonly known as Dhania in the Indian
Subcontinent and Cilantro in the Americas and some
parts of Europe, is an herb that is extensively used
around the world Its leaves and fruits have a
recognizable and pleasant aroma and are commonly
used raw or dried for culinary applications. It cures
things like
Skin disorders
Low cholesterol levels
Diarrhea
Blood pressure
Anemia
Anti-allergic properties
Ingredients
100 gm coriander leaves
1/4 cup chopped green chillies
1/4 cup mint leaves
2 tsp salt or to taste
2 Tbsp lemon juice
Method of cooking
chutney
Place all the ingredients in a blender
and blend well. Add a little water only
if required to ease blending or grind the
ingredients on a grinding stone.
CARDAMOM
Cardamom is an evergreen perennial with thick
rhizomes and erect steams bearing pointed
leaves. White flowers with a pink to violate
striped lip are born in a loose spike in summer
followed by to beige , 3 –selled capsules
containing 15-20 aromatic seeds the seed and
oil are used in herbal preparation and the seeds
to flavour baked goods coffee curries ect.
Cardamom is the warm aromatic herb that has
tonic effects
The health benefits of cardamom include
gastrointestinal protection, cholesterol control, control
of cancer, relief from cardiovascular issues, and the
improvement of blood circulation in the body. It is
useful for curing dental diseases and urinary tract
infections such as cystitis, nephritis, and gonorrhea.
Cardamom possesses aphrodisiac properties and is
also used as a cure for impotency, erectile dysfunction,
and premature ejaculation.
Ingredients
100 gm poppy seed (khus khus), soaked in water overnight
1/2 cup (125 gm) ghee
2 cups milk
8 green cardamoms, powdered
1/2 cup sugar
2-3 almonds, blanched to garnish.
Wash khus khus, being careful to discard the residual grit and
mud.
Leave in a colander to drain excess water.
Heat ghee in a kadahi or heavy bottomed pan and add the
khus khus to it. Saute over low heat till it turns golden
brown.
Add milk and cardamom powder and cook till moisture dries
up. Add sugar and saute some more.
Garnish it with almonds.
