Peanut Butter and Jelly

Our research question was to try
to determine why salmonella can
survive and grow in less than
ideal conditions, such as a jar of
Peter Pan peanut butter. In the
bacterium Pseudomonas
aeruginosa, a lipase enzyme has
been isolated from a strain which
is capable of growing in water
restricted environments. Our
hypothesis is that the lipase
enzyme may be involved in that
process by permitting the
bacteria to grow in a low water
high fat environment.

To address this problem we compared lipase
protein sequences from a variety of
prokaryotes to determine a link between
structure and function
