Vegetarian
cuisine

А cook - is a person who cooks food in catering establishments.
That profession is very creative and unusual. Cook is sometimes called as a
real magician, who can cook a masterpiece of a taste course from a very
usual products.
VEGETARIAN CUISINE

Vegetarian cuisine refers to food that
meets vegetarian standards by not
including meat and animal tissue products.
For lacto-ovo vegetarianism (the most common
type of vegetarianism in the Western
world), eggs and dairy products such
as milk and cheese are permitted.
VEGETARIAN FOODS CAN BE CLASSIFIED INTO
SEVERAL DIFFERENT TYPES:




Traditional foods that have always been vegetarian
include cereals, grains, fruits, vegetables, and nuts
Soy products including tofu and tempeh which are
common protein sources
Textured vegetable protein (TVP), made from defatted
soy flour, often included in chili and burger recipes in
place of ground meat
Meat analogues, which mimic the taste, texture, and
appearance of meat and are often used in recipes that
traditionally contained meat. Vegans may also use
analogues for eggs and dairy products

It was pointed out that there was an extremely rich
vegetarian tradition in many Indian, Asian and African
cooking and that eating vegetarian dishes was in line
with a more sustainable lifestyle and was
recommended as part of a healthy diet.
FOODS USED IN VEGETARIAN CUISINE



Vegetable soup and cheese sandwich, a meal which is
suitable for vegetarians
Cereals/grains: maize, hempseed, corn, wheat, rice,
barley, sorghum, millet, oats, rye, triticale, buckwheat,
fonio, quinoa; derived products such as flour (dough,
bread, pasta, baked goods).
Vegetables (fresh or pickled); derived products such as
vegetable oils
DESSERTS AND SWEETS

Eastern confectionery and
desserts, such as halva and
Turkish delight, are mostly vegan,
while others such as baklava
(which often contains butter) are
lacto vegetarian. Indian desserts
and sweets are mostly vegetarian
like peda, barfi, gulab jamun,
shrikhand, basundi, kaju katri,
rasgulla, cham cham, rajbhog, etc.
Indian sweets are mostly made
from milk products and are thus
lacto vegetarian; dry fruit-based
sweets are vegan.
CUISINE THAT IS TRADITIONALLY VEGETARIAN




These are some of the most common dishes that vegetarians
eat without substitution of ingredients. Such dishes include,
from breakfasts to dinnertime desserts:
Vegetarian food products made from cereal grains.
Many bean, pasta, potato, rice, and bulgur/couscous dishes,
stews, soups
Many side dishes, such as mashed potatoes, scalloped
potatoes, some bread stuffings, seasoned rice, and macaroni
and cheese.

RECIPE FOR A DISH

Vegetable Soup

INGREDIENTS: 2 carrots, 2 turnips, 1 small marrow,1 leek (or onion), 1 potato,1 stick celery, 1
clove garlic, 20 g butter, salt pepper, 1 litre water, 2 sprigs parsley

1. Peel and wash all the vegetables, slice them.
2. Melt the butter in a saucepan and add the vegetables.
3. Cook for 4 to 5 minutes on a low heat, stirring continuously.
4. Add salt and pepper and pour in 1 litre of very hot water. Bring to the boil and simmer for 25
minutes.
5. Chop the parsley in the mill and sprinkle over soup just before serving.
6. Add a spoon of fresh cream.





