The History of French
Cuisine
In 2010, UNESCO(联合国科教文组织) added
French cuisine to the list of cultural objects
that are called ‘intangible cultural
heritage’. The long history of French
gastronomy leading up to this honor is a
grand one, and it is a history influenced not
only by centuries of French kings and
queens, but also surrounding and faraway
cultures.
During the Middle
Ages, French food
was already an
important part of
life for many
people, but a
French meal looked
very different then
than it does
nowadays.
Fine tableware and
glassware became
important during this
period, and the use of
color also took center
stage. New foods were
also introduced during this
time, both from the
Mediterranean, such as
tomatoes, as well as from
distant regions, such as
green beans coming to
France for the first time
from the New World.
• French cuisine is extremely diverse, with
only the Chinese having similar variety in
their food. This variety is supported by the
French passion for good food in all its
forms, France's extraordinary range of
different geographies and climates which
support the local production of all types of
ingredients, and France's long and varied
history.
Later Italian Influence
When Catherine de Medici came to France in
the 1540s, Italian influences came with her.
Although food had always been visually
appealing in France, the idea of food as
theater was new. Under her reign as Queen
and then Queen Mother of France (three of he
sons became King of France), the dinners she
hosted helped move French cuisine forward in
history.

restaurants have menu simplified to 3-5
dishes, clicking on the convenience of

Tips and warnings
How to Follow French Table
Manners
• Wait until the hostess places her napkin in her lap before you
follow suit.
• Keep your hands on the table at all times. You hand should never
be at your sides or in your lap.
• Wait to drink until the host makes a brief toast.
• Place your bread directly on the tablecloth rather than on your
plate. If there is a bread plate provided, you can use that.
• Rest your utensils(餐具) on your plate when not actively eating.
They should be placed at 8 o'clock and 4 o'clock. This indicates
you are not finished with your plate.
• Use a piece of bread on the end of a fork to clean up sauce on
your plate before the next course if new plates will not be used
for each course.
• Indicate that you want to be served more wine by completely
finishing your glass. To show that you do not want more wine,
leave a small amount in your glass.
• Show that you have finished with your plate by putting your
knife and fork together vertically on the center of your plate.

• If you are unsure about whether you can eat a certain dish with

• It's acceptable table manners to use a toothpick at the table if

French consider it incredibly rude for phones to ring during
dinner.

adding ketchup to a food is an insult.

• Cut the snails , mushroom ,winter
bamboo shoots and ham into cubes.
• Make the egg into the egg foam
• Inject the oil into the hot pot, and put
the cubes into it, cook then put into the
snails shell
