The Origins of Dairy
• Humans began drinking animal milk as early
as 7000 BC
– Started drinking during the Neolithic Revolution
when we learned how to domesticate livestock
• Milk was consumed raw until 1863
– French chemist Louis Pasteur invented
pasteurization

• Not whole any more
• Pasteurized
– Heating process kills germs and bacteria
– Destroys nutrients and enzymes
• Homogenized
– Intensive blending process by centrifugal force
– Makes the milk and the cream not separate

• Raw
– More texture, flavor
– Less Asthma symptoms
• Vat pasteurization
– Pasteurization kills immunoglobins, lipase,
phosphates and vitamins C, B12 and B6
• Organic
– Free from pesticides, antibiotics and rBGH
(recombinant bovine growth hormone)

• Conventional
– Hormones to stimulate more milk production
– Potential for antibiotics
– Buy skim if you’re going to buy conventional
because toxins are stored in the fat
• All milk contains 59 different hormones that
are not human

Lactose Intolerance
• Lactose intolerance symptoms
– Abdominal pain, excessive gas, diarrhea, nausea
• Most humans lactase production declines
greatly by the age of 5
– Continues to decline throughout life leading to
some form of lactose intolerance
• Can still drink lactase treated milk

– Foods that have an action similar to estrogen

Reasons to Avoid Dairy
• Provokes the immune system
• Can be mucus forming
• Full of saturated fat that is linked to heart
disease
• Can aggravate Irritable Bowel Syndrome
• Can increase cholesterol

Strategies for Avoiding Dairy
• Use nut milks when possible
• Go for goat cheese instead
– Goat cheese comes from a smaller animal and can
be easier to digest
• Avoid alternate cheeses
– Hemp cheese, rice cheese, etc.
– Often alternate cheeses contain added fillers
• Eat a little dairy vs. a lot
