Making Pizza
Dough Ingredients
Topping Ingredients
4 cups sifted all-purpose flour
1 package dry yeast
1 cup warm (85°) water
2 tablespoons vegetable or olive oil
1 teaspoon salt
shredded mozzerella cheese
tomato sauce
pepperoni
Italian sausage
ham
sauteed onions
black olives
anchovies
chopped mushrooms
oregano
Directions
To make pizza dough, mix the ingredients as you would to make bread. Knead the dough for about 10
minutes. Cover with a damp cloth and let rise for about 2 hours. Oil two 14-inch pizza pans. Sprinkle a
little flour over them. Pat and stretch the dough in the pans, pinching up a rim around the edges to
hold the filling. Prick dough in about 6 places. Preheat the oven to 400°. Brush each pizza lightly with
olive oil to prevent crust from becoming soggy. Spread the pizza with your favorite cheese and tomato
sauce. Add toppings as desired. Let the pizza sit for 10 minutes. Bake about 25 minutes or until
brown. Serve at once.

The Eternal Cockroach
An ancient cockroach sat on a patch of moss in the dim red light of a dying
sun. A young cockroach came to sit beside the old one. “Tell me about the
dinosaurs, Grandfather,” the young cockroach said.
“The dinosaurs were gigantic creatures!” the old one said. “The ground
shook when they walked. Their voices were like thunder. They ruled the earth
for millions of years. They never noticed us. We crept around and lived our
quiet lives.”
“What happened to them, Grandfather?” the young cockroach asked. “Oh,
they died out,” the old one said. “And we didn’t miss them when they were
gone.”
“Tell me about people, Grandfather,” the young cockroach said next.
“People were big creatures,” the old one said. “There were many, many of
them. They filled the planet with their machines and their cities and their noise.
They hated us and tried to kill us off with poisons and traps.”
“What happened to them, Grandfather?” the young cockroach asked.
“Oh, they died out,” the old one said. “And we didn’t miss them when they
were gone.”
