process in which
products are heated
to destroy the harmful
bacteria they contain.

Milk
• Milk comes in many
different forms at the
grocery store. The
main forms are:

UHT
Fresh
• Fresh milk is milk in its liquid form
• Some examples are:
– Whole milk
– Two percent
– One percent
– Skim
– Chocolate milk or flavored milk
– Buttermilk
UHT
• UHT milk can last several months without
refrigeration.
• UHT milk is sterilized by heating it to very
high temperatures for a few seconds. All
bacteria is killed this way.
• This milk type is becoming more common
in the United States.
• It is mainly used in Europe and where
there is not any refrigeration.
Dried
• Dried milk has the
water removed so it is
in powder form.
• It can be kept without
refrigeration for many
months.
• It has a different
flavor and is mostly
used for baking.
Canned
• Canned milk can be kept for a long time.
– Once it is opened it must be refrigerated
• Evaporated milk-made with whole milk has
60% of the water removed.
• Sweetened Condensed Milk-same as
evaporated milk but sugar is added.
Cheese
• Cheese is made from
milk by thickening the
milk solids.
• The solid portion of
the milk is called
curds.
• It is separated from
the whey.
Cooking with cheese
• Cut into small pieces
so it will melt faster
– Wait until the last
minute to put cheese
in sauces and soups.
• Use low power in the
microwave when
melting cheese so it
does not become
rubbery.
