Potatoes: A Favorite Gluten-Free Comfort Food
Potatoes, naturally gluten-free, are one of the world’s most versatile comfort
foods. Foundational in a wide range of international and all-American cuisine, potatoes are the
perfect blank canvas for a variety of flavors. This is good news for your shoppers who must eat
gluten-free , as they often crave the taste and texture of foods that are now not part of their
diet. When good health depends on eating gluten-free, potatoes can help reinvent much-loved
meals and create new healthy meal traditions.
Fresh and unprocessed, potatoes add great taste, good nutrition and one more vegetable to
mealtime. One medium-sized potato (5.3 oz) with skin has:
• More potassium than a banana (620 mg)
• Nearly half your daily value of vitamin C (45 percent)
• 10% DV of vitamin B6
• No fat, sodium, or cholesterol
• Trace amounts of thiamine, riboflavin, folate, magnesium, phosphorous, iron, and zinc

According to the National Foundation for Celiac Awareness, an estimated 3 million Americans suffer from side

Stick to eating "real food." Avoid processed foods and learn how to prepare your own meals using fresh
ingredients that are naturally gluten-free, like potatoes, which can serve as a substitute for foods that glutenfree eaters often crave, like pasta and bread.

Incorporate whole grains, like quinoa and nutrient-dense vegetables, like potatoes, spinach and broccoli, into
your diet on a regular basis to ensure you are getting proper nutrients and maintaining a balanced diet.

Don’t automatically assume that foods like pizza and lasagna are off-limits. You can find gluten-free pizza
dough options available in many supermarkets and it’s easy to make using gluten-free flour. And you won’t
