Buying TVP: TVP can be
bought in dehydrated
form
Storing TVP: Store in a
cool, dry place

• Oil is extracted from the soya beans

• Soya beans are ground into flour

• Carbohydrates are removed. Only protein remains.

• Oil, flavouring & additives are added

• The mixture is heated,extruded through a nozzel into a reduced
pressure environment in order to get the correct texture.

• It is dehydrated to make cubes or mince

• TVP is fortified with cobalamin (Vitamin B12) & packaged for sale

MANUFACTURE OF MYCOPROTEIN
• Derived from the mycelium of the fungus

• These fungus cell are grown in a sterilised
fermenter to provide the correct environment
for the growth of mycoprotein

+ Oxygen, glucose & nitrogen.
+ Potassium, magnesium & phosphate
• The temperature in the fermenter is 65 ̊C
• The cells are removed from the fermenter - the
mixture(mycelia) is then harvested.

• Filtered in huge centrifuges.
• The mycelia are bound together with egg albumin

• The harvested product absorbs a wide variety
of colours & flavourings
