Project Update
2008-2009 School Year
• CMS has delivered over 160 bags of toiletries
and groceries
45 residents have asked to receive groceries
Over 15 families have committed to delivering
groceries

What is a good diabetic meal
• Carbohydrate: 45 - 60 grams, mostly from whole grains
• Vegetables: ½ cup serving – no added salt
• Fruits: ½ cup serving – no added sugar
• Protein: To balance carbohydrates target about 15 - 20 grams
• Cholesterol and Sodium: None!
• Minimal Fat
Acceptable Foods for Diabetics
• Protein: Canned tuna in water, canned chicken in water,
peanut butter, beans, shelled walnuts
• Vegetables: Low or “No Added salt” canned
vegetables
• Fruits: “No Sugar Added” canned fruit, natural apple
sauce, raisins
• Soups: Low Salt (10% or less of RDA) or Low Fat
(5% or less RDA)
Acceptable Foods for Diabetics
• Grains: Whole grains including oatmeal, barley, plain
and whole grain crackers
• Cereals: Cheerios, Total, Shredded Wheat and whole
grain cereals NOT sugar sweetened
• Sugar substitutes: Splenda, Equal, Sweet and Low
• Milk: Powdered, evaporated, imperishable boxed milk
such as Parmalat
• Sweets: Sugar free Jell-O, sugar free pudding, low
carb/low fat/sugar- free cookies
What does LOW SALT really mean?
• Try to have less than 10% of daily recommended value
of sodium in a serving
• 250 mg. or less of sodium per serving is ideal, but
anything over 450 should be avoided
What does LOW SUGAR really mean?
• Sugar should be less than half of carbohydrate content
• Avoid foods that contain high fructose corn syrup, corn
syrup solids, glucose, fruit juice concentrates, syrup or
molasses
• Less sugar does not always mean low carbohydrate
• 10 grams or less per serving for most fruits and pastas
What does LOW CARBOHYDRATE really mean?
• Target 10% of daily recommended value of carbohydrate
in a serving for vegetables, fruits and side dishes
• Sugar should be less than half of carbohydrate content
• Select whole grain and whole wheat pasta, brown rather
than white rice and limit potatoes and simple
carbohydrates
• 25 grams or less for non-beans/legumes
