Food & Drink Fads
3.1 Text A
目录
词汇
Eating and drinking habits have changed considerably in the last five years. More
people are eating in pubs, which were previously reserved for drinking and an
occasional Sunday lunch, and coffee bars are appearing on every corner of our high
streets.
Pub grub
Eating out has never been so popular in the UK, and we are spoilt
for choice. It is no longer just restaurants that satisfy our appetites.
Many pubs - which traditionally served only alcohol - have become
popular eating venues. As well as pubs that serve the usual 'pub
grub‘ (pie and chips, fish and chips, salad and chips), there are now
more than 430 gastro-pubs in the UK. Gastro-pubs serve restaurant
standard food in a more informal setting than restaurants and many
take pride in offering healthy food, locally produced.
Restaurateur and critic Egon Ronay has recently produced a 2006 guide to gastropubs. He commented that the emergence of these pubs is the 'biggest change' he had
seen in UK food for 50 years.
'I tend to eat out in bars as it's more relaxed, generally slightly cheaper and easier to
do on the spur of the moment. If it's a special occasion though I would go to a
restaurant, probably what's now called a contemporary British restaurant.' Jasmin,
23, from Widnes.

Coffee culture
We are also succumbed by coffee in all its numerous variations more than ever
before. In the last five years cafés and coffee shops have appeared everywhere and
visiting them is a popular pastime. If the weather is reasonable (and sometimes even
if it isn't) we adopt the continental style of sitting outside.
目录
词汇
People feel comfortable visiting them on their own with a book or newspaper and
equally find them good places to relax with friends. It is becoming much more a part
of our culture to meet for a coffee or stop for an espresso or a latte when we want a
break from shopping. Coffee is also available in many bars and pubs.
The choice doesn't end there though. Healthier alternatives, such as noodle bars and
juice bars, are also springing up and becoming increasingly popular. Maybe they
will be next to dominate our high streets.

Children’s Diet Effects Their IQs
Parents were quizzed about the types and frequency of the food and drink1 their children
consumed when they were three, four, seven and eight and a half years old. Children
brought up on healthy 2 diets are more intelligent compared 3 with their junk food eating
counterparts, new research suggests.
It was found 4 that babies fed a diet packed high in fats, sugars, and processed foods had
lower IQs than those fed pasta, salads and fruit. The effect is so great that 5 researchers
from the University of Bristol said those children with a "healthier" diet may get an higher
IQ.
Scientists stressed good diet was vital in a child's early life as the brain grows at its fastest rate during
the first three years of life. This indicated head growth at this time is linked to 6 intellectual ability and
"it is possible that good nutrition during this period may encourage optimal brain growth".
Scientists tracked the long term health and wellbeing of around 14,000 children born 7 in 1991 and
1992 as part of the West Country's Avon Longitudinal Study of Parents and Children (ALSPAC).
They were marked on a sliding scale which ranged linked to 8 minus two for the most healthy to 10
for the most unhealthy. IQ was measured using a validated test – the Wechsler Intelligence Scale for
Children – of 4,000 children when they were eight and half years old 9. The results found after
taking account of potentially influential factors, a predominantly processed food diet at the age of three
was associated with 10 a lower IQ at the age of eight and a half, irrespective of whether the diet
improved after that age.

On My Birthday Party
I was born on Mar.13, 1988. From then on, there will be a grand and hot
birthday party held in my family and this year is not an exception.
On that day, I invited my classmates and neighbors to spend the time together.
We cut cakes, lit the candles, and I made a wish. I wished I could pass all the
examinations this semester. It was just a small wish but it was out of the bottom
of my heart!
My parents of course attended the party and they gave me a big present. It
was a Dell computer which was something I had been dreaming for. I kissed my
parents and hugged them so tightly. They are the best parents in the world!
The party lasted for hours but I felt it was not long enough. Maybe happy
times always goes so fast. I am now looking forward to my next birthday party.
What gift will my parents and classmates or friends give me next time? It is
always a secret for me.

A Healing Cuisine
4.1 Text B
目录
词汇
Chinese cuisine is widely known and enjoyed in all four corners
of the world. Who could not confess to longing for a favorite
Chinese dish? But there is one interesting concept concerning
Chinese food which is almost unheard of in the West, and which
is becoming increasingly ignored by the youth of the East—the
ancient custom of “tonic food.”
Tonic food is food which is consumed to improve one’s wellbeing, or stave off sickness, particularly at times when one is
more prone to illness. For instance, it was once the custom for
new mothers to eat a sesame- oil hot pot every day for the first
month after giving birth. It was believed that this dish would
benefit the muscles, reduce pain, improve circulation, stimulate
sweating, and warm the body.
In fact, these Chinese beliefs parallel some Western theories of
health, although each takes a different path toward the very same
goal. Western medicine actually recommends some of the exact
same ingredients that make up the chicken hot pot dish. Sesame
oil has been found to promote contraction of the womb while
providing lots of calories, and chicken meat is particularly high in
protein. Any Western doctor should be happy to suggest such a
Chinese dish after childbirth.

The elderly, weak, and young can also benefit greatly from tonic foods, especially during the
词汇
winter. Some foods, such as goat meat and spinach, are seen as “hot,” while others, such as
Chinese cabbage and radish, are seen as “cold.” One should be careful not to eat too much of
either “hot” or “cold” food. However, how much “hot” or “cold” food one should eat depends on
the time of the year, how the food is prepared and what it is prepared with, and the individual’s
health.
“Warm” or “cool” tonic foods are strongly
recommended. The choices for “warm” and
“cool” foods range from simple sea
cucumber to the delicacy of bird’s nest soup,
depending on the individual’s economic
circumstances.
The concept of tonic food is far from losing
credibility, either with Westerners or
practitioners of modern medicine. For
example, up until two years ago, tonic foods
were added to the meals served at a
renowned hospital.

The custom of prescribing tonic foods for a healthier life also spills over into the catering
industry. Although tonic foods themselves are losing popularity among the younger generation,
Chinese herbal medicines, such as wolfberry fruit, can be found on many a restaurant menu,
either added to fruit tea or as a beneficial addition to a dish. These herbs attract customers, such
as over-worked office staff, in need of a modest pick-me-up.

6. Communication Skills 2
Present Yourself
Start Here
目录
词汇
Have you ever received a memo and felt the sender really wasn't thinking about what you needed
to know or hear? Maybe you have attended corporate presentations that have simply left you cold? Or
perhaps you've even delivered communications yourself and realized, in retrospect, that you really
hadn't got the measure of your audience and their needs.
This is at best frustrating. At worst it is such a huge "turn off" that it can have a negative effect, or
even produce an effect that is the exact opposite of the one you had intended.
Whether you need to communicate general day-to-day information or "big news" about major
changes in your organization, the best communications start with some good planning.
The first step is to put yourself in the shoes of your audience. What do they need to know, and
want to hear? What's their preferred way of receiving information? What will stop them listening to
what you have to say? And how will you know that they have got the message?
So there's quite a bit more to good communications than preparing a good memo or presentation!
This tool will help you through the preparation steps and so help you create an audience-focused
communication plan that's sure to get your message heard.
Good corporate communications is very much like good marketing. You have a message (product)
that you need to ‘sell’ to your audience (customers). If they are going to ‘buy it’, you must package
the message so that they can understand it and pay attention to it. You must make sure the value and
benefit outweigh any downsides (the ‘price’ you are asking them to pay). And you must reach the
audience through the right communication channels. Then, following the communications (promotion),
you must be able to measure the effectiveness and how well the message is ‘bought’.

Several decades after health officials began urging Americans to cut down on salt.
Do you know how much you're consuming?
If you're a typical American, it's about 3,400 milligrams of sodium per day. That's well beyond the 2,300
mg recommended by the U.S. Dietary Guidelines. And it's 15 times as much as the human body requires.
Average sodium intake has increased about 50% since the 1970s, largely because we're eating more
convenience foods. And as makers of processed food have cut down on fat and sugar, they've often added
more salt.
But all this sodium can be bad for your health.
Excess salt has been linked to osteoporosis, kidney damage and stomach cancer. Worse, it raises blood
pressure, a key factor in heart attacks and strokes, which kill about 850,000 Americans a year.
'After smoking, high blood pressure is the leading cause of preventable illness
and death,' says New York City Health Commissioner Thomas Frieden, who is
urging makers of packaged foods and restaurants nationwide to gradually
reduce their sodium content by 50% over the next 10 years. The Centers for
Disease Control and Prevention estimates that such a reduction could save
150,000 lives and $10 billion in health-care expenditures a year.

Some 50 million Americans have hypertension (that is, blood pressure readings consistently at or
above 140/90 mm/Hg). Another 20 million are prehypertensive (with blood pressure from 120/80 to
139/ 89 mm/Hg). Hypertension is more common among African-Americans than whites, and nearly
90% of Americans eventually develop it as they age.
With that in mind, the CDC is urging anyone who has hypertension, is African-American or over age
40 -- nearly 70% of the U.S. population -- to follow a stricter guideline of just 1,500 mgs a day.
About 80% of Americans' salt intake comes from processed foods and restaurant meals; only 20%
comes from salt used in home cooking and added at the table. But cutting salt from processed food
isn't easy. Besides enhancing taste, salt helps provide texture to many foods and acts as a
preservative. And Americans have become accustomed to the taste.
目录
词汇
The Grocery Manufacturers Association, which represents food makers, says many of its members
have cut sodium in their products and introduced lower-salt items in recent years. But it believes that
any government effort needs to include consumer education and scientific research as well.
A few critics don't think a broad reduction in sodium is warranted. Michael Alderman, a professor of
medicine and public health at Albert Einstein College of Medicine in Bronx, N.Y., says it hasn't been
conclusively shown that cutting salt intake across the population would save lives, and it could have
unintended consequences. Lowering salt can cause kidney problems and contribute to insulin
resistance in some cases, says Dr. Alderman, who is an unpaid consultant to the Salt Institute, an
industry group.
Darwin Labarthe, director of the CDC's Division for Heart Disease and Stroke Prevention, counters
that there's a very broad consensus that reducing salt would cut the risk of heart attacks and strokes,
and there is little evidence of harmful effects. The American Heart Association, the American Medical
Association and the World Health Organization all urge lower salt consumption.

What can you do about your own salt intake? It's impossible to know for sure how much you're
consuming. Even raw chicken in the grocery store is sometimes 'enhanced' with salt water to make it
plumper (and heavier, and thus more costly). But you can get some idea by checking the Nutrition
Facts labels on products you buy and keeping a running tally.
词汇
Some bakery goods and breakfast cereals have far more sodium than you'd expect. There's often a wide
range of sodium among brands of the same product. Be sure to check the serving size indicated on the
label. A bag of chips that looks individual may be listed as multiple servings.
When you cook at home, experts counsel to use only half the salt the recipe calls for; experiment with
herbs and spices, or go with the natural flavor. Kids who grow up with less salt may never develop a
'salt tooth.‘
It may take a while to get accustomed to less salt, but once your tastes adjust, you may not want to go
back. Commissioner Frieden likens reducing salt to switching from whole milk to skim milk. 'If you go
back, whole milk tastes like heavy cream,' he says.
