Why use canning to preserve food?
• It stops food
from going bad
because it
removes oxygen
destroys
enzymes and
prevents the
growth of
bacteria yeast
and mold
How do we do it ?

Select fresh, clean food
Peel if necessary
Pack into clean jars.
Add lemon juice, vinegar or syrup to some
food
• Use 2 part sealer lids
• Process
Some types of canning jars
Fruit and Vegetables that are canned
properly will keep for a very long time
Canning Equipment
This is a
pressure cooker.
It brings the
internal
temperature up
quickly to form a
vacuum inside
the jar so the
bacteria can no
longer grow.

Advantages
• Food keeps on shelf
not in the fridge
• Ok in a power failure
• Keeps food’s vitamins

Disadvantages
• You need special
equipment
• You have to be very
careful to do it right
• Food loses some of
it's color
