So What Should we be Eating
for a Proper and Healthy Diet?
Eating the Right Kind of Food
is not Enough
S Food needs to be cooked and cleaned properly

S Many nutrients are in the peels of fruits and vegetables that
we don’t utilize

S Washing in dirty water can also be very serious and lead to
numerous gastro-intestinal problems
However
However
S What happens when we either make
bad decisions or because of either
poverty or lack of education we are
forced into bad situations?
Imbalanced Diet
S If we do not eat a balance diet our growth and development
may be affected
Harris Lines – These are markers showing where
a child’s growth has stopped and started growing do
to poor nutrition
Imbalanced Diet
S If a required nutrient is taken it at a level lower than needed
then a disease may occur
S Deficiencies may occur in Proteins, Vitamins or Minerals
Protein Deficiencies
S Proteins are body building elements required by the human
body. They provide the required energy for the body to
function properly and are crucial for the development of
muscles. Proteins also facilitate the development of nails, a
healthy skin and promote hair growth. Protein deficiency
has side effects and can lead to medical conditions.
Protein Deficiencies
S Kwashiorkor
Protein Deficiencies
S Kwashiorkor
S Roughly translates as “The disease the child gets after
the new baby comes”
Protein Deficiencies
S Kwashiorkor
S Roughly translates as “The disease the child gets after
the new baby comes”
S This means that after the mother stops nursing the
baby does not get enough amino acids and cannot
make proteins
Protein Deficiencies
S It is characterized by stunted growth, dry swollen skin,
water retention (edema) and a large swollen belly (Why?)
S Many concentration camp survivors suffered from
Kwashiorkor
Protein Deficiencies
S Marasmus
Protein Deficiencies
S Marasmus
S Marasmus is caused by a protein deficiency as well as a
deficiency of carbohydrates and fats

S It generally effects children under one, whereas
Kwashiorkor generally effects children older than one

S Marasmus means “decay” children who have it are at least
60% below normal body weight, have prominent ribs,
sunken eyes and are unable to digest or absorb food
Vitamin Deficiencies
SVitamin A
Deficiency
Vitamin A Deficiency
S Night Blindness is one of the first signs of vitamin A
deficiency

childhood blindness

S Vitamin A deficiency is the leading cause of preventable

S Vitamin A deficiency prevent the eyes from producing the
proper fluids to keep the eyes lubricated. The eyes dry out,
the skin crack and bacteria can get in and destroy the cells
responsible for sight
Vitamin A Deficiency
S Vitamin A is a fat soluble vitamin, and therefore, needs to
be consumed with fat in order to have optimal absorption.
High vitamin A foods include sweet potatoes, carrots, dark
leafy greens, winter squashes, lettuce, dried apricots,
cantaloupe, bell peppers, fish, liver, and tropical fruits.
Vitamin Deficiencies
SVitamin B12
Deficiency
Vitamin B1 (Thymine)
Deficiency
S Thymine deficiency leads to Beriberi
Vitamin B1 (Thymine)
Deficiency
S Thymine deficiency leads to Beriberi
S Beriberi causes extreme weakness, swelling of the legs, loss
of appetite and weight
Vitamin B1 (Thymine)

S Beriberi causes extreme weakness, swelling of the legs, loss
of appetite and weight
S It may be fatal due to heart and capillary problems
Vitamin B1 (Thymine)
Deficiency
S Where do we find Thymine?
Vitamin B1 (Thymine)
Deficiency
S Where do we find Thymine
S Thymine is found in very high levels in the husk of rice

S Where do we find Thymine
S Thymine is found in very high levels in the husk of rice
S Therefore eating whole cooked, non-milled, non-white rice
is an effective means of avoiding Beriberi

S Therefore eating whole cooked non-milled, non-white rice is

S In general Beriberi has not been as big a problem in India as
in other Asian Countries because Indians eat less processed
rice or parboil it before milling which helps to retain the B1

S Scurvy causes spongy bleeding gums, loosening of teeth,
spots on the skin, extreme fatigue and weakness in muscles
and joint and potentially death

S Scurvy causes spongy bleeding gums, loosening of teeth,
spots on the skin, extreme fatigue and weakness in muscles
and joint and potentially death
S Scurvy was common among pirates and sailors on long
seafaring voyages. Some of Columbus’s men suffered from
it
Vitamin C Deficiency
S In 1753 a Scottish surgeon in the Royal Navy, James Lind,
proved it could be treated with citrus fruits

S The British who controlled the West Indies at the time
treated it with West Indian Limes instead of the more
common lemons and oranges. Hence the term “Limy’s”
used to refer to the British
Vitamin Deficiencies
SVitamin D
Deficiency
Vitamin D Deficiency
S Vitamin D deficiency can cause Ricketts
S Exposure to sunlight allows the body to convert inactive
vitamin D to the active form. This allows calcium to be
absorbed and bones to be strong

S Exposure to sunlight allows the body to convert inactive
vitamin D to the active form. This allows calcium to be
absorbed and bones to be strong
S Rickets causes severely bowed legs, pain in the bones and
increased fracturing
Vitamin D Deficiency
S Interestingly Rickets is more common among people living
close to the equator (Like people in India) than it is in
people who live in Northern climates (like me) – WHY?
Mineral Deficiencies
S Lack of Iron causes anemia – it causes you to be tired and
weak. Foods rich in iron include spinach, broccoli, peas,
shrimp, liver and eggs

S Lack of Iodine causes goiter – causes abnormal
enlargement of the thyroid gland

S This is a big problem in America. It is caused by to much
high fat, high sugar fast food, to much time spent playing
video games and surfing the web and not enough …
