




Proofing is the creation of the proper environment
to promote the leavening of yeast raised dough
products
Proper environment 85° to 105° and an “RH” /
relative humidity of 85% to 95%
Moist air helps to maintain the pliability of the
dough surface to allow for expansion
Living yeast cells feed on the sugars and amino
acids in the dough and release CO2. Dough 2Xs
Average time for proofing, 45 to 55 minutes.
