ROSES
THE ROSE
The Rose (Rosa) is a flowering plant, part of the Rosacea family
(Rosacea).
It includes 100-150 varieties of shrubs and crawlers mainly found in
Asia and to a lesser extent in Europe, South America, and
northwestern Africa. Many species and hybrids are grown as
ornamental plants worldwide. Roses are also grown as aromatic
plants.
The history of
production
It is believed that the
cultivation of roses for
rose water and later
for rose oil has begun
in India and Egypt.
With the movement of
Turks and Arabs in the
9th century it is
brought to Persia and
Tunisia.

The trade of rose oil in Europe
Trade with rose oil in Europe
started in the 16th century
and the first evidence of rose
plants on our lands is from
the 17th century - around
Edirne. Within the
boundaries of present-day
Bulgaria the first
documentary evidence is
from 1712 in the village of
Voynyagovo, Karlovo.
Rose oil
Rose oil is a product of
roses, obtained by the
double distillation of
different kinds of roses Rosa damascena,
sempervirens, moschata,
centifolia and other grown
in Europe, Asia and Africa
To extract 1 kg of rose oil it takes about five tons of
roses. The picking of delicate pink flowers goes from 3-4
am and lasts till 9-10 am. This is the time when the rose
can preserve the most precious ingredients - geraniol,
eugenol, farnesol.
Celebrating the rose
The holiday was first celebrated in 1903. Traditionally held
during the first weekend of June.
Rose water
Rose water is a natural
product that is
produced by distilling
the flowers of the
Damascena oil rose.
Thanks to the rose oil
dissolved in it, it acts
disinfectant and
antibacterial, soothes
the skin in case of
rashes, allergies and
skin irritations.
Bulgarian rose in perfumery
It is a well known fact that
the Bulgarian rose oil
(acquired by Rosa
damascena) is of the
highest quality among
other rose oils, making it
a preferred ingredient for
many famous perfume
brands like Christian
Dior, Givenchy,
Lancôme, Bvlgari,
Chanel, Elizabeth Arden,
Kenzo, Paco Rabanne,
Estee Lauder and other.
Symbolism of Roses
In symbolism of flowers roses say more than we ourselves dare.
A beautiful bouquet can change the atmosphere in a room and
bring about positive emotions, moreover it carries a message of
words unspoken.
The red rose
The Red rose is the
preserved symbol of love,
it is given only when we
want to say "I love you"
and in no other occasion.
It is important whether a
fully blooming flower or a
bud is given. The bud of a
red rose also means strong
feelings, which must be
kept a secret.
The white rose
The White rose
symbolizes loyalty
and purity, it says
"trust me."
The yellow rose
The yellow rose, which
is often considered a
message of hatred
actually speaks about
friendship. A slightly
open yellow rose asks
"Do you still love me"
and the importance of
a completely
blooming yellow rose
is "Please come
back“.
The pink rose
The Pink rose is a
symbol of happiness
and complete
pleasure, but also
carries a message of
love and mystery and
admits "My heart
belongs to you." A
slightly open pink
rose says that love is
true. Fully blooming,
the flower says
"Believe in what I
say and do."
White and red roses
The combination of red
and white roses means
"close forever."
Probably that’s the
symbolism in the
funeral ceremonies,
when the leaves of these
roses are scattered
around the grave of the
deceased to send the
message that this man
will remain in our
hearts forever.
The rose is the symbol of
Bulgaria
RECIPES WITH BULGARIAN ROSE
The use of the rose dates back before Roman
times, but the method of steam distillation is first
introduced by the Arab physician Avicenna in the
10th century.
Rose jam
Necessary products
rose petals – 4 full cups of oil rose petals
sugar - 4 cups
water - 1 and 1/2 cup
rose water - 1/2 cup
lemon juice - 1/2 cup freshly squeezed
citric acid- 1 tsp for 1 kg of sugar
Turkish delight
Necessary products
Corn flour - 5 tablespoons
water - 1/2 cup hot+ 1/2 cup cold
sugar - 2 cups
Orange juice - 1/2 cup
rose water - 1 tsp
nuts - 2 cups optional
sugar - icing
malebi
Necessary products
Milk - 1 liter
water - 1 l
starch - 200 g Natural
sugar - 200 gr
rose water - 50 ml
Fruit syrup - 400 ml (raspberry, cherry, strawberry)
Chicken Oriental
Necessary products
Chicken - 1 pc.
Honey - 2 tsp.
rosewater - 1 tsp.
cardamom - grinded 1tsp.
lemon juice - 1 tsp.
oil – 1 tsp.
salt - 1/2. tsp.
almonds - 30 gr.
chili – 1 tsp

sugar - 100 gr
walnuts - 50 gr
raisins – 50 gr
rose water - 10 ml

BAKLAVA rolls
Necessary products
pastry - 7 leaves
walnuts - 400 g ground

For the syrup
water - 400 ml
sugar - 450 kg
lemon - 1 tsp juice
rose water - 2 tsp

Gyulovitsa /rose brandy/
Gyulovitsa is a traditional Bulgarian brandy, which is destilled in the
areas around Karlovo and Kazanlak. To make rose brandy you will need
lots of petals of oil, aromatic rose.
The amount is
approximately a regular
household bucket, not less
than 10 liters. Put in the
collected leaves.
Separately, in a 100 liter
keg 40 kg of sugar is disolved
in 40 liters of water. Mix and
pour 3 bottles of wine vinegar.
To accelerate the fermentation
process add 3 molds of yeast
dissolved separately in 2 liters
of water. The mixture is stirred
vigorously.
Then put the petals of roses,
which you have previously
cleaned and washed with
cold water. It is stirred and
allowed to ferment for two
weeks.
In Kazanlak region
rose brandy is also turned
into liqueur. 200 gr of
rose petals are placed in
a 5-liter jar. It is topped
up by 3 liters of fresh
/odourless/ brandy. The
jar is sealed and left for a
week. During these seven
days at least once a day
the jar is shaken.
When it's ready, the
rose petals are pressed in
a gauze. This is poured
into glass bottles which
are capped and arranged
horizontally in a cool
place. In a month’s time
the beverage is ready for
consumption.
